All Grain Recipe: Kölsch
Here’s an example of what we like to drink when the sun’s out – an elegant session beer with a new world hop twist. This is our basic Kölsch recipe – we brew it every year but change the aroma/dry hop each time to mix it up. Nelson Sauvin works really well, as does Mandarina Bavaria, but this one uses Amarillo for a zesty orange finish. Don’t be tempted to up the hops – the finish should be quite subtle and clean.

Centennial hops
Centennial was one of the first hops we purchased for the farm. We had mixed success getting the hop established at first, but it’s now well rooted and we’ll be looking to expand it next season. When growing, Centennial hops definitely stand out – they have very distinct red shoots and dark vines.
CLONE: FOUNDERS INDIA PALE ALE
Selected as a benchmark for the Beer Judge Certification Program in the US, Centennial IPA has quickly become the IPA of choice. Pour yourself a pint of this complex flavourful ale and bask in the floral bouquet of the frothy head. Relish the immense citrus accents, achieved by the abundance of dry hopping.
CLONE: THE KERNEL INDIA PALE ALE
Hazy golden with a lasting white head. Fruity aroma with peach, pineapple and orange. Sweetish fruity flavour, clean, hoppy, awesome.
10 steps to all grain beer making
Ten steps may sound a lot at first, and I guess this I why a lot of people choose extract brewing, but we’re here to help prove that all grain homebrewing is just as easy and a lot more fun. An experienced brewer once said “whatever the result, right or wrong, beer is beer”.
